Both are great splits and really depends on how hard you want to workout specific muscle groups. If you do a chest/tricep workout you'll feel more of a burn on your chest compared to chest/back because most chest moves are complimentary tricep moves, like bench press. If you do six exercises in a workout with chest/tris, four should be chest and 2 should be tris, whereas chest/back would be 3 exercises of each, much less of a targeted burn. You can do chest/back days multiple times a week though if you're only doing 3 exercises of each, and you can superset chest/back, like bench and pullups.
